Great Steak

If you have not been to the August the Bread Man's website, this would be a good time. He just posted something called a Dirty Steak. Scroll to the bottom and salivate.

I wonder how this recipe would turn out using the briquettes on a gas grill rather than using coals??

Alton Brown did the same on a Good Eats episode. Basically the coals are so hot the meat kind of hovers above them and you get very little dust on it. Briquettes really won't work because they're formed with some kind of lighter fluid in them and the fumes will cook into the meat.
