I wonder how this recipe would turn out using the briquettes on a gas grill rather than using coals??
Alton Brown did the same on a Good Eats episode. Basically the coals are so hot the meat kind of hovers above them and you get very little dust on it. Briquettes really won't work because they're formed with some kind of lighter fluid in them and the fumes will cook into the meat.
